In under two hours, this Italian Instant Pot Pork Roast pressure cooker recipe cooks tender, juicy pork shoulder roast. Make pulled pork sandwiches or serve it with gravy and mashed potatoes for a delicious dinner everyone will love!

FOR THE PORK:– 7- pound boneless pork shoulder– Salt and freshly ground pepper– 1 teaspoon mild paprika– 2 cups packed fresh– ¼ cup fresh rosemary leave– 2 tablespoons fresh thyme leave– ¼ cup extra-virgin olive oil– Salt and freshly ground pepper– 1 large onion , sliced– 2 cups broth– 1 cup water 1 cup white wineFOR THE GRAVY:– 5 Tbsp butter– 5 Tbsp all-purpose flour– 3 cups broth– ½ cup mushroom– Salt and Pepper

To cook pork, cut the roast into two large pieces. Salt and pepper the pork and paprika it. Use a plastic zip bag or storage container. Refrigerate overnight or for a few hours before cooking.

Turn Instant Pot on "Sauté" and add 2 tablespoons extra virgin olive oil before cooking. Sear the pork loin sides in 1 tablespoon of olive oil until golden brown. Press Cancel and remove Instant Pot roast. Plate and set aside.

Place the roast on the Instant Pot trivet. Pour in water, broth, wine, or more broth/water if you don't like wine. Top the roast with sliced onion and fresh herbs. Apply 1 tablespoon extra virgin olive oil.

Safety valve.Depending on size and doneness, set the instant pot to manual pressure ‘HIGH’ for 45 minutes. Let go. After the top unlocks, slice or shred the roast or pork with two forks for pulled pork sandwiches (I left mine warm for almost 30 minutes while making my sides).

Make gravy: Melt butter in a medium saucepan on low. Stop cooking. Mix flour and butter.

Add 1/2 cup broth and mix well. Add another half-cup. Continue adding broth 1/2 cup at a time and stirring until smooth. Boil on medium-high. Simmer on low for a few minutes.

Salt and pepper to taste, and cooked mushrooms if using. Serve pork with gravy, mashed potatoes, polenta, and your favorite green vegetable. You can add more extra virgin olive oil to the pork before serving.
