Wok or deep fryer on high heat Mix the eggs. To coat the wok, swirl 1/2 tablespoon of oil around it.

In a wok that is almost smoking, add the beaten eggs and swirl them around to cover the whole thing. When the egg looks dry, use a spatula to scramble it.

Take out of the wok and set aside. Clean the wok and add the last 1/2 tablespoon of oil.
